Peanut Butter Energy Balls

Ingredients 

  • 1 cup natural peanut butter (i like to make my own)
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 cup unsweetened desiccated coconut
  • pinch of sea salt
  • 2-4 teaspoons water

 

Method

  1. In a mixing bowl, stir together the peanut butter, maple syrup and vanilla extract.
  2. Stir in the oats, coconut and salt until well combined. If the mixture doesn’t hold together well when pinched together, add the additional water, a teaspoon at a time until the mixture holds together well
  3. Form 1 inch balls by pressing about 1 tablespoon of the mixture together. Roll it and pinch it with your fingers on the palm of your hand.
  4. It is good to stay well for up to a 1 week in the fridge. Remove it 5 minutes before eating to warm up at room temperature.
